What a way to kick off the new year, with a fantastic review from Martin Lamoureux of Habanero Montreal!

Bonjour à tous,

Aujourd'hui je vais vous présenter une sauce que j'ai trouvée dans un marché à Montréal l'été passé. Je n'avais jamais entendu parlé de cette sa...uce, donc je me suis dit qu'il serait important d'en faire un review pour la faire connaitre. je parle ici des produits Gordz. Cette sauce est mélangée par Gord Patterson lui même et sa femme Heather et ils sont des producteurs qui font poussé eux même leurs légumes et en plus de mélanger leurs produits. Donc des produits super frais et entièrement naturels. Aucun pesticide et engrais chimique ne sont utilisé dans le processus. Ils font pousser plusieurs variétés de piments allant de très doux jusqu'au Carolina Reaper détenteur du record Guiness. Tous leurs produits proviennent de la ferme Gordz en Ontario, Canada ou ils sont établie depuis 2008. Malgré que l'étiquette soit simpliste, j'aime bien le format d'emballage genre petit pot. Celle que j'ai choisi est la Gordz xxx, c'est la plus forte, mais je regrette de ne pas avoir acheté d'autre moins forte. Comme je dis souvent, ce n'est pas parce que c'est fort que c'est bon. Plusieurs sauces douces sont vraiment très bonnes. Celle-ci est la plus forte de la collection si je ne me trompe pas, une sauce d'une belle couleur orange avec une texture ressemblant beaucoup à un mash. Allons jeter un coup d'œil aux ingrédients; premièrement des carottes, oignons, piments forts, jus de lime, vinaigre, ail, huile d'olive, sel de mer. Très peu d'ingrédients, tous naturels, j'aurais aimé savoir quelles sortes de piments, mais c'est pas vraiment grave.

Pour les arômes, je suis devant une sauce avec une base de carottes, donc la carotte est bien présente. On sent bien les piments et leurs parfums un peu sucrés. Le vinaigre est très peu présent, mais je sens tout de même une pointe d'acidité provenant du jus de lime. L'ail est aussi de la partie, mais sans envahir tout les autres ingrédients, le parfum est doux et bien dosés. Je crois détecter un peu l'huile d'Olive, mais c'est très subtil, il faut vraiment se concentrer. Je crois que c'est plus un sentiment qu'un arome, comme si l'huile venait adoucir le parfum parfois agressif des piments. En gros un arôme agréable qui annonce du plaisir à mes papilles. Un petit bijou très méconnu des gens ,je crois, et qui doit à mon humble avis être mis plus en évidence.

Pour la saveur, je suis devant un produit très peu acide, mais très sucré. Le sucre des fruits et légumes ressort beaucoup. Une sauce douce et forte à la fois. Tout d'abord la fraîcheur des aliments nous permet de bien goûter les carottes, mais viens ensuite un bon rush de piments sans devenir désagréable. Je m'explique, le piquant reste dans la bouche, mais le rush de brûlure s'estompe assez vite. Je suis sûr que c'est l'effet de l'huile d'olive qui fait cette différence. J'adore cette sensation, souvent certaines sauces sont tellement fortes que la brûlure reste longtemps et nous empêche de bien profiter du repas, car cela brûle trop. Je goûte bien le gout d'agrume provenant de la lime, elle apporte un côté fruité. Il y a beaucoup de morceau de légume et de graine dans la sauce, la sauce est assez épaisse. L'oignon est présent, mais l'ail fait sont apparitions dans la finale. Le format est très pratique pour insérer une cuillère et la laisser dedans durant le repas. C'est une sauce assez forte et très agréable en bouche. Un autre bon produit canadien.

Je vais lui décerner la note de 8.5/10 pour la saveur, un 7/10 pour le piquant et une mention spécial pour la fraîcheur du produit. Ça sent et ça goûte frais. Bravo à vous pour ce très bon produit. J'aimerais pouvoir la retrouver dans plus d'endroits, mais ils ont un site web pour la livraison pour ceux qui voudraient en profiter. Très bonne sauce à ce procurer, un point de vente que je connais est le marché de St-Anne de Bellevue où je l'ai trouvé. Ils ont plusieurs autres produits que vous pourrez essayer.

Hello everyone,

Today I will present you a sauce that I found in a market in Montreal last summer. I had never heard of this sauce, so I thought it would be important to make a review to make it known. I talk here about Gordz product. This sauce is mixed by Gord Patterson himself and his wife Heather and they are producers who grow themselves their vegetables in addition to their product mix. So super fresh and all-natural product. No pesticide and fertilizer are used in the process. They grow several varieties of peppers ranging from very mild to Carolina Reaper Guinness world record holder. All their products come from the Gordz farm in Ontario, Canada where they live since 2008. Despite that the label is simplistic, I like the small package size pot. The one that I have chosen is the Gordz xxx and is the strongest, but I regret not having bought more less strong. As I often say, it is not because it is very hot that it's good. Several sweet sauces are really good. This is the hottest of the collection if I'm not mistaken, a sauce with a beautiful orange color with a texture much like a mash. Let's take a look at the ingredients; First carrots, onions, hot peppers, lime juice, vinegar, garlic, olive oil, sea salt. Very few all natural ingredients, I would like to know what kinds of peppers they use.

For aromas, I am in front a sauce with a carrots base, so the carrot is there. We feel a little sweet peppers and perfume. Vinegar is very little now, but I still feel a touch of acidity from the lime juice. Garlic is also in the game, but without invading any other ingredients, the scent is sweet and well proportioned. I believe I detect a little olive oil, but it's very subtle, you really have to concentrate yourself. I think it's more a feeling then aroma, as if oil had soften the aggressive scent of chilies. Basically a pleasant aroma that announcement please my taste buds. A small and little-known gem that people, I think, and that must be in my humble opinion need to be more in evidence.

For flavor, I stand before a very low acid product, but very sweet. Sugar fruits and vegetables stand out a lot. A sweet sauce and strong at the same time. First the freshness of food allows us to taste the carrots well, but then just a good rush of peppers without becoming unpleasant. Let me explain, the spicy still in the mouth, but the rush of the burn fades quickly. I'm sure this is the effect of olive oil that makes the difference. I love this feeling, often some sauces are so strong that the remaining burn time prevents us from enjoying the meal because it burns too much and for too long. Well I tasted the citrus from the lime, it brings a fruity side. There are many chunk of vegetable and seed in the sauce, the sauce is thick enough. The onion is present, but garlic makes an appearances only in the final. The format is very convenient to insert a spoon and let it in during the meal. This is a pretty hot sauce, and very pleasant in the mouth. Another good Canadian product.
I'll give him a score of 8.5 / 10 for flavor, a 7/10 for spicy and a special mention for the freshness of the product. It smells and it tasted fresh. Bravo to you for this great product. I wish I could find it in more places, but they have a website for delivery for those who would enjoy. Very good sauce to get, a store that I know is the St. Anne de Bellevue market where I found it. They have several other products that you can try.

Winter 2015

Winter 2015

It was a very busy year at Gordz Hot Sauce! The Fall was gorgeous at the Pepper Ranch while we were in production and gearing up for Christmas markets. It was far above normal in terms of warm and sunny! The greenhouse made it to December this year! That was amazing! The live plants have all been moved indoors safe from the freezing temps we get here in the winter months. Christmas is always a very busy time for Gordz Hot Sauce, as we attend many Christmas Shows, do special Christmas packaging and gift baskets So here is little video of our year in review ~ enjoy! and now.....Planting starts this week! Lol

Fall

Fall

Fall at Gordz Pepper Ranch is a wonderful sight! The pepper gardens are overgrown with lush and loaded superhot pepper plants with vibrantly colourful peppers. So many varieties! Some of the hot pepper plants grew to gigantic proportions! The pepper plants really love being in the dirt versus potted, and they sure do love the rain! The mature fruit continues to be far larger than those from container plants. As Thanksgiving approaches and the cooler temps and frost descend upon us, we perform the "annual harvest" and we are thankful for our bounty! We proceed by cutting the pepper plants from all the gardens (we do move several into the greenhouse to keep the plants alive). We cut the plants by variety and bring them to tables by the trailer load; whereby, the pickers proceed to pick each plant clean. It's a long day, but with a little help from our friends and some great music, we manage to get it done! Of course, this leads to major production! We use all the peppers while they are fresh, when only the finest quality will do!

Summer

Summer

​As summer progresses, we continue to water, weed and tend all these pepper plants. The landscape fabric saves much of the weeding time. The birds take care of pest control for us, as they walk under the plants snagging the pests for lunch. We seem to have a security detail of hummingbirds as well. I did mention we live in a birdcage, right? As the flowers and vegetables come into season, we harvest them and make our different sauces and jellies right in our on-site Food Processing Facility, located ideally, between the garden and the house! ​

Spring 2015

Spring 2015

Spring is a busy time for Gordz Hot Sauce. We have to plan out our gardens while we continue sowing seeds, with the addition of watering all the young plants frequently. While the weather is cool and the snow melts away, we take the opportunity to clean up the property and prepare for new gardens.

We have decided to alternate gardens and parks throughout Gordz Pepper Ranch, as we grow and reclaim the land of this old homestead. Once the plans are made, we set to tilling and hilling new gardens while removing old shrubs and debris, opening up previously unused areas.

As the temps start to rise, we then we get down to the task of making all the pepper gardens. We prefer the French-style of gardening with raised beds. It saves the gardens from drowning during the rainy season, which is typically spring in this region. We also use micro-irrigation to minimize water waste and landscape fabric to reduce weeds naturally. After creating all the beds and planting all the vegetable gardens, we begin plannting 1000s of young pepper plants in various stages of growth, one by one, all by hand. The weeding is done by hand here at Gordz Pepper Ranch as well. 

The bird song around Gordz Pepper Ranch is amazing! We live in a birdcage, only we are in the cage (house) so to speak! The birds seem to work in tandem with us in the gardens, walking along the beds as we plant.

This is the beginning 2015...

This is the beginning 2015...

​We began this year by ordering fresh seed stock to compliment our own harvested seeds from last year.  We sow the seeds in tray after tray of too many varieties to list. We line them all up on tables under their domes for easy watering and we wait for them to sprout. Once sprouted, we add lights to assist with their growth and water frequently.
