Created by Gordz Hot Sauce and featuring Maple & Chipotle Infused Maple Syrup 

After a few weeks of isolation, many have turned to cooking and baking as a creative outlet and the rewards of such efforts have never tasted so good. 

We are doing this here on our farm at Gordz Hot Sauce too.  

We have great fun trying different recipes with different spice levels from sweet to savory.  Some workout and some sure do not. lol  Lately, we have been in search of sweet recipes that are low sugar and then tweaking them to our liking (re: adding heat).  With cheesecakes being the recent winner, low sugar paired with protein, good mix.  For a surprisingly low sugar dessert, this cheesecake recipe, without a topping, would be ideal.  However, we decided to go all out on a topping and makit interesting, so we did.  The result was nothing less than stunning in both appearance and taste!

Who doesn't love cheesecake?  Then add in Glengarry Maple's local sweet maple syrup that has been infused with Gordz Hot Sauce's very own chipotle peppers! How local is that?  It was truly a brilliant idea of We haven't stopped enjoying it! 




Prep: 30 min   Cook: 20 min   Total 50 min  Yield: 12



  • 1 (8 ounce) packages cream cheese
  • 1/4 cup white sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon lemon juice
  • Graham Crust
  • 1/2 cup + 2 tbsp graham cracker crumbs
  • 1 pinch ground cinnamon
  • 2 tbsp butter

Cherry topping (homemade pie filling)

  • 2 cups pitted frozen dark sour cherries.
  • ½ cup Maple & Chipotle Infused Maple Syrup.
  • 2 tbsp cornstarch.

Directions for topping:

Prep: 25 m Cook: 15 min Ready in: 40 min

1. Place cherries into a saucepan over medium heat and cover the pan; heat cherries until they release their juice and come to a simmer, 10 to 15 minutes. Stir often.

2. In a bowl, whisk the maple & chipotle infused maple syrup with cornstarch until smooth; pour the mixture into the hot cherries and juice, and thoroughly combine. Return to low heat, bring to a simmer, and cook until the filling has thickened, about 2 minutes; remove from heat, let cool, and use as pie filling.


Preheat oven to 350 degrees F (175 degrees C). Place cupcake liners into muffin tins.

To Make Filling: In a medium bowl, combine cream cheese and 1/4 cup sugar. Stir in egg, vanilla and lemon juice. Mix thoroughly.

To Make Crust: Combine crumbs and cinnamon. Cut in butter until crust forms small crumbs. Put one spoonful of crust into each cupcake liner and pat it down. Spoon a layer of filling on top of crusts.

Bake in preheated oven for 30 minutes. When tarts are fresh from oven, spoon cherry pie filling over top of each. Let tarts chill in refrigerator for 30 minutes to an hour.
